Making the cake 1. Preheat the oven to 190 C, 375 F, or Gas 5. 2. Whisk eggs and sugar together in a bowl. 3. Whisk until thick and creamy ( mixture should hold imprint of beater ) . 4. Sieve in the flour and baking powder, and gently fold into mixture. 5. Take out a small amount of cake mix and put it into a separate small container for baking. You can use an empty food tin such as those which contain tuna fish, or baked beans. Make sure you wash it thoroughly first. Alternatively you can use a muffin tray. This piece of cake will make the frog's eyes. 6. Divide the rest of the mixture between two greased cake tins. Bake the lot for 15-20 minutes. 7. Cool on a wire tray, spread one half of the larger sponges with jam and sandwich together. To make the icing Mix 4oz of icing sugar and 2oz of butter/margarine together. Add a small amount of water to make a smooth, thick paste. Take out a small amount of white icing to make the frog's eyes and put into a dish. Take another small amount of the mix, put into a dish and add red food colouring ( this will be used for the frogs mouth). Add a few drops of green food colouring to the remaining icing. Icing the cake Spread the green icing over the top and sides of the cake. Make an icing piper by rolling the greaseproof paper into a cone. Tape the edge, fill with icing and squeeze. Pipe the frogs mouth on with red icing. Now cut the smaller cake in two and stick the two halves to the top of the big cake with jam to make the frog's eyes. Cover the eyes in white icing then put a brown Smartie in the middle of each eye.
