Green Frog Dip
Serves 6
You will need:
1 large ripe avocado
1/2 tablespoon of lemon juice
2 tablespoons of cream cheese
1 tablespoon snipped chives
1 tomato, skinned de-seeded and chopped
salt and freshly ground black pepper
Decoration
2 slices cucumber
2 slices hard-boiled egg
2 stuffed olives
2 chives
cheese cut-outs
raw vegetables
What to do:
1 Cut the avocado in half, remove
the stone and scoop out the flesh.
2 Mash or blend together all the
ingredients (the snipped chives, tomato, cream cheese and lemon
juice) and
season with pepper and salt. Place in a bowl.
3 Decorate the frog's face. Use the uncut chives to make the
mouth and the slices of cucumber, egg and olives to make the
eyes.
4 Place the frog dip on a large plate and surround it with a
selection of raw
vegetables and cheese for dipping.
